Roquette 1797 absinthe is unique among the several varieties offered by the Emile Pernot Distillery of Pontarlier, France. This absinthe is created using a French recipe from 1797, well before many other historical absinthes had begun production. Roquette 1797 contains the traditional trinity of herbs: anise, fennel, and wormwood, as well as several other herbs found in no other commercially available absinthe. Limited in quantities, Roquette 1797 is batch distilled in an antique alambic and is best prepared with ice-cold water for an optimal louche. The distillery has continued manufacturing a range of absinthes, cordials, and liqueurs since it began in 1890, one of only two distilleries to have survived from the Pontarlier absinthe years. Created by Claude-Alain Bugnon specifically to participate in the French Absinthiades in Pontarlier, this recipe didn't settle for simply participating, but rather took home the Golden Spoon award in 2005, 2006, 2007, and 2008. Recette Marianne is a bit bolder and spicier in flavour than the original La Clandestine, but the personality is still unmistakeably of the La Clandestine family of absinthes. Created from natural plants and distilled for more than 18 hours in Los Montes del Maestrazgo, this absinthe is from a recipe that has been in the Segarra family for generations. The absinthe has a floral and herbal aroma in the glass and a light citrus-like Spanish signature. Green anise and wormwood integrate well with the hint of old oak brandy barrels used by the distiller. Deva 70 Absenta is one of several recipes of absinthe to come from Destilerías La Vallensana, a Barcelona company around since 1845. Deva 70 is a macerated absinthe and has been made for nearly 100 years. According to La Vallensana, in Spain Deva is also used to aromatise fish dishes, and it is no surprise due to the heavy and sweet anise scent of this absinthe.
